We store the minimum needed to run an account: login, e-mail, the wallet addresses you deposit from and the history of your rounds and payments.
Round history is kept because it is the only way to answer a dispute about a settled bet. Payment history is kept for the same reason.
We do not sell data to third parties. Deleting an account removes personal fields and leaves anonymised round records for accounting.
